Weekly Meal Plan – Mapo Curry Recipe

I’ve not written a meal plan for a couple of weeks, but this week I’m back with a recipe too. Mapo Curry is a Japanese dish that is popular in china! This recipe is my daughter’s version which we find delicious.

Mapo Curry

INGREDIENTS:

  • 500g minced pork
  • 350g firm tofu
  • 250 ml of chicken stock
  • 1 tbs Red Miso paste
  • 1 tbs Oyster Sauce
  • 1 tsp of harissa paste
  • 1 tsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tsp cornflour
  • 1 inch of fresh ginger, chopped
  • 2 garlic cloves, finely chopped
  • 3 spring onions, chopped
  • boiled rice to serve

METHOD:

Prepare the sauce by mixing the cornflour soy sauce, harissa paste, oyster sauce, miso paste, chicken stock in a bowl.

Prepare the tofu by slicing into 1 inch squares

put the sesame oil in the pan and gently fry the garlic and ginger for about 1 minute then add the mince, stirring until brown.

Add the sauce and mix well, bringing to the boil. 

Turn down the heat and add the tofu, stirring gently to coat without breaking it up.

Serve with boiled rice and sprinkle with the spring onion pieces.

I know the ingredient list sounds long, but most of it can be used more than once. It’s been one of our favourite dishes for a long time. My husband is allergic to sea food so the oyster sauce is replaced with plum sauce and we make his up seperately. All ingredients can be found in most supermarkets. I always buy from Sainsburys.

The curry can be cooked in the time it takes to boil the rice, so remember to get that on first 🙂

We had Mapo Curry last week, so it’s not on our menu this week.

Weekly Meal Plan – Eggy Bread &Cheese Recipe

Welcome to my meal plan for this week. I’m including one of my kid’s favourite lunch time recipes of Eggy Bread Cheese Sandwhiches too.

I haven’t done a meal plan for the last couple of weeks. We had a holiday that sort of went through two weeks messing things up a bit. You would have been proud of me this last week though. Before we went away I arranged for a shop to come on the day we got home and I only spent £125. We got home rather late so the kids had nuggets and chips (quick and easy) and the adults had a take out. BUT, I didn’t spend any more money all week!!

This Weeks Meal Plan

This week we are not going to be so frugal as it’s my Daughter’s birthday so we are starting with a meal out (Which I know is going to cost a bomb!) Thankfully, it’s the last birthday this summer.

  • Saturday – Pizza Hut for birthday meal
  • Sunday – Toad-in-the hole
  • Monday – Paella
  • Tuesday – Chicken and chips
  • Wednesday – Lasagne
  • Thursday Peri Peri pork strips with ratatouille
  • Friday – Fish or chicken meal

I found out on holiday that Boo likes Scampi! I love it too but no-one else is keen. It’s good to add an extra meal to the kids menu though.

I have to say, the kids have been fantastic at cooking their own lunch nearly every day during the school holidays. It’s been a big relief for me as I find it very tiring cooking. They look for what they feel like eating and cook it mostly themselves with me standing by. It’s not a lot, but they have made sausage sandwiches, pasta and sauce, turkey dinosaurs and oven fries, quesadillas, and eggy bread cheese sandwhiches.

Here’s a quick recipe for Eggy Bread Cheese Sandwhiches.

ingredients:

  • Enough bread and cheese to make a cheese sandwhich for each person.
  • eggs (1 per person)
  • a little cooking oil
  • First make your cheese sandwhiches and cut them into four squares. Then squash them so they are quite flat.
  • whisk up your eggs in a bowl
  • put the cooking oil in a frying pan and allow it to get hot.
  • when the oil is hot start dipping your sandwhiches into the egg mixture and put them straight into the pan. (tip: it’s best to cook one sandwhich at a time, so four squares.)
  • Turn them over to see if they are brown on one side, and leave to brown the other side. They should be golden brown when you take them out of the pan.
  • Leave one a piece of kitchen paper towel to dry off excess grease.

We like to eat ours either on their own or with a little ketchup or brown sauce.

This Weeks Meal Plan

Last weeks meal plan went okay, we had to swap the pork meatballs and spaghetti because they didn’t arrive in the shopping, so we had another lasagna.

On Friday we had the carpet fitted and although I’d pre-prepared dinner, the kitchen was a mess. A lot of the stuff from the living had been stored in the kitchen during the day and it was just too untidy to do any cooking. I could have cleaned it up I guess but Graham was out taking his brother home who’d come to help to move furniture, and I was completely out of spoons. So we had a take out instead.

This Weeks Meal Plan

  • Saturday – Peri peri Pork strips with lime and chilli rice and ratatouille
  • Sunday – Pie and mash
  • Monday – fish/ chicken and chips
  • Tuesday- pasta bake (either chicken or sausages)
  • Wednesday – fajitas
  • Thursday – Paella
  • Friday – curry

As I’m writing this on Sunday, I can already show you pic of Saturday’s meal. It was really yummy, although eldest daughter didn’t enjoy it.

It was so simple to make. I bought the pork in boneless steaks and cut them in strips. Then I marinaded them in a bought sauce; Nando’s Peri Peri sauce. I left them overnight for extra flavour. The rice was also a cheat, a packet of microwave chilli and lime rice that we’d had in a degustabox a couple of months ago and not used. The ratatouile was a selection of chopped vegetables, I put in courgettes, aubergine and green peppers. Then I covered it with a slightly spicy tomato sauce from a packet which had also arrived in a degustabox. I popped them in the oven to bake until soft. The Pork I grilled until just cooked, the rice I popped in the microwave, and the salad was just lettuce, cucumber and grated carrot. Those of the family that are not keen on rice had straight to wok noodles with soy sauce.

I’m not a pork lover but I did pork as my eldest daughter doesn’t each chicken. She hated the meal anyway, so next time I will do it with chicken 🙂

The kids break up on Friday so I best get checking out some simple lunch ideas for them. They love to cook their own lunch at weekends so I’m going to be researching some real easy recipes for them to cook themselves. We are also going to do some taste testing, trying new tastes each week. Fingers crossed they will be eating more than chicken nuggets by the end of the holidays. I can only hope.

Weekly Meal Plan

Meal Planning

I haven’t done a meal plan here in a little while because I was doing it on Monday after the shopping had arrived and it seemed disadvantageous. I do my weekly shop online on Sunday, so now I’m planning earlier so I know what I want to buy, rather than what I’m going to cook with what I’ve bought. It’s not rocket science really is it!

This Weeks Plan

  • Monday – Mediterranean fish and new potatoes
  • Tuesday – Turkey Meatballs and spaghetti
  • Wednesday – Hot Dog Rolls and fries
  • Thursday – Pasta bake
  • Friday – Fish and chips
  • Saturday – Curry
  • Sunday – Chicken roast

The fish on Monday is a pre-prepared one. Graham will need a chicken alternative due to his fish and seafood allergy

The Turkey meatballs we buy ready made and I make a lovely tomato based sauce for them. I don’t eat spaghetti (yes, even I’m a pain sometimes) so I’ll have mine with pasta instead.

Quick recipe – Hot Dog Rolls

Hot Dog rolls are surprisingly delicious. I buy frankfurter sausages and ready made puff pastry. Roll out the pastry and cut it into strips just a little longer and just over twice as wide as the sausages. The put the sausage in the middle and smear with mustard and tomato ketchup (or whatever relish you prefer.) Then I slit the pasty on either side of the sausage at slight angles kind of like wings on each side. Then brush with egg wash and fold the sides alternately. Or you can just wrap them up like sausage rolls. Brush the tops with egg wash and bake until puffed and golden (About 15 to 20 minutes.)

Young’s Frozen fish is our favourite brand. We have found that beer battered fish is less soggy when baked. If you want a fish without a soggy bottom then I’ve found getting it out of the freezer 10 minutes before cooking works best.

Curry on Saturday will be from a jar, we are currently trying all brands to find our favourite.

The Sunday Roast is not a family favourite, so I’ll provide some pasta dishes for those that complain.

Shopping

We actually went to the supermarket last week, and still have some food left that will help with this weeks shop. I will be back to shopping online this week though.

One thing I picked up which I wouldn’t normally buy is cold teabags. Now I have to drink a lot of water because of my treatment and I get fed up of plain water. So, I thought I’d try something different. These are okay, a little less stronger than squash and they gave you the sort of flavour you’d expect from a bottle of still flavoured water. They were a bit more expensive but I found I could leave the ‘teabag’ in and keep refilling my bottle and the flavour lasted for about four 500ml bottles, so better value in the end.

Fingers crossed it all goes to plan this week.
